Apple Bread
2 cups of all purpose flour
1 teaspoon of baking powder
1 teaspoon of baking soda
1 stick of butter
½ cup of sugar
3 large eggs
1 teaspoon of vanilla extract
1/3 cup of orange juice or juice of one orange
1 red apple, chopped, take seeds out (can keep skin) (any variety, red delicious, honey crisp)
1 green apple, peeled and chopped (skin optional).
Directions: Preheat oven to 350 degrees. In a mixer, add butter, eggs, sugar, orange juice and vanilla extract. Next, add the dry ingredients, mix well. Add apple slices. Pour batter into a greased loaf pan. Sprinkle cinnamon, brown sugar and pecans to the top of the batter. Bake at 350 degrees for 30-35 minutes. Check if the middle of the bread is baked thoroughly with a toothpick.
Basil Sausage Bruscetta ala mozzerella
4 Sausages, Italian, hot, mild, or sweet
1 Loaf of Italian Bread
1 Clove of Garlic (1 Tablespoon of crushed garlic, spread)
1 Cup Olive Oil
5 slices of fresh Mozzarella cheese (per cut loaf)
A dash of oregano
2 Tablespoons of basil paste
2 Campari tomatoes
Directions: Cook sausage to almost perfection in your favorite oil, and simmer. Slice Italian bread in two, separate top and bottom, align on a baking sheet. Spread basil paste on the bread first, next adding crushed garlic or spread crushed garlic. Next, add sliced tomatoes and the cut into bite size pieces of cooked sausage. Next add, a dash or two of oregano and the sliced mozzarella, drizzle olive oil. Place in a 350 degree oven for ten minutes or until mozzarella is melted. Can always add a sprinkle of Romano or parmesan cheese.
